Meatless Monday with Mindy

This is the 4th installment of Meatless Monday with Mindy. I didn't think anyone would notice that I hadn't posted the last two Monday's but I was caught watching the pot ( a watched pot never boils...).

I have pictures and recipes for the last couple of weeks but because I want to get this up while it's still at least close to Monday the 18th, I thought I'd share what we ate for Meatless Monday yesterday.  No recipe's required...

I boiled some Buitoni's Wild Mushroom Agnolotti Ravioli


Once the water for the pasta started to boil, I heated up some Prego Marinara sauce. When it started to "pop" I added some chopped spinach I already had in the fridge.



I had stopped by the grocers and put together a salad at the salad bar full of good for you, low fat veggies and legumes


And the bakery department had some lovely whole grain loaves of fresh baked bread.


I had been out most of the day working and the thought of trying to come up with something to cook was not a pleasant idea on an empty stomach. So, even in a pinch, I was able to put on a wholesome, meatless meal which satisfied my honey and me.

I hope this inspired you to think outside the cooking box. Even in a pinch, we can choose to eat meatless. In this case, it was fast, simple and easy to prepare, and filling!

  1. Lets see, my meatless monday consisted of:
    my typical breakfast: pb&j sandwich
    lunch was leftovers of "Corn Chowder Quinoa Casserole" from "Let Them Eat Vegan!" by Dreena Burton
    and for supper, since it was our 6 monthaversary, hubby and I went to Bucca di Beppo for supper. I have to say, it was hard to find dairy free, vegetarian food in an italian restaurant where everything is smothered in cheese and cream sauce... (Oh, fresh mozzarella is so tempting!) ... But I did it - eggplant parmesan minus the parmesan with a side of spaghetti. It was delicious! The lovely fresh basil in the middle of winter was worth not having cheese!
    Then, the big topper - desert (The only thing I "cooked" all day!) a raw strawberry and beet cheesecake that didn't taste like beets AT ALL! (I was worried) It was quite strawberry sweet and tasty.
